Can anyone recommend a simple (I use that word loosely) JAM tosser
under Linux? I'm wanting to set up a point on my personal box.

The easiest one is Crashmail II if you can find it, I used to be able
to set that one up in about 5 mins. :)
HPT (thanks to help in Micronet) is running things here. Once you look
at the examples Jay gave me it's not that difficult.
I might try HPT since people seem to be using it.
