    The following is recipe for mini Italian meatloaves. Coming from me, this means
    in this particular instance a recipe that is diabetic friendly when it comes to
    the effect on bloodsugars. Keep in mind this does not mean it tastes bad, You judge for yourself with the ingredients if it is something You might like, but it is good for those of us who can't eat all the breadstuffs that normally go with our favorite foods.

    Mini Italian Meatloves

    Ingredients:

    o 1 1/2 lbs lean ground beef
    o 3/4 lb of hot italian sausage
    o 1/2 oz dried porcini mushrooms, re-hydrated and drained
    o 2 large eggs
    o 1/4 cup pine nuts
    o 1/2 teaspoon of dried italian herbs
    o 2 cups spinach leaf, fresh and chopped
    o 1/4 cup marinara sauce

    Directions:

    1. Preheat oven to 350 degrees F
    2. Spray 4 mini loaf pans with non-stick spray, setaside
    3. In a large mixing bowl combine all ingredients, except sauce until thoroughly mixed.
    4. Divide equally and press into loaf pans on a baking sheet.
    5. Place in oven and bake for 50 minutes.
    6. Remove from oven and let rest for 10 minutes before serving.
