Title: Vietnamese Beef w/Lettuce Wraps

1 ts Fish sauce
1 ts Soy sauce
1 ts Sugar
1 cl Garlic; minced
1 1/2 lb Sirloin; in thin strips, 2"
- x 4"
MMMMM-------------------------NUOC CHAM------------------------------
2 tb Fresh lime juice
2 tb Fish sauce
1 tb Sugar
1 cl Garlic; minced
1/2 Thai or serrano chile; thin
- sliced
MMMMM---------------------------WRAPS--------------------------------
1 Head red leaf lettuce;
- leaves separated, washed,
- dried
5 oz Dried thin vermicelli; (aka
- rice stick), boiled 4-5
- minutes, drained, rinsed,
- in 4" lengths
1 c Julienned carrots or bean
- sprouts
1 c Julienned cucumber
Sprigs of cilantro & mint
Sprigs of opal basil (opt)
For the beef: Combine the fish sauce, soy sauce, sugar and
garlic, and stir until the sugar is mostly dissolved.
Place the beef in a shallow dish and coat with the
marinade. Set aside while you make the nuoc cham, and
prepare ingredients for lettuce wraps, placing each in its
own serving bowl.
For the nuoc cham: Place the lime juice, fish sauce,
sugar, garlic, chile and 2 tablespoons water in a bowl and
mix until the sugar mostly dissolves.
Heat a grill pan or large cast-iron skillet over
medium-high heat. Lightly oil the grill pan or skillet and
cook the beef in batches about 30 seconds per side. Place
on a serving dish and serve with the other ingredients.
To assemble: Each diner can hold a lettuce leaf in one
hand and place a small amount of rice noodles, beef,
vegetables, cilantro and mint leaves in the center, wrap
loosely and dip in the nuoc cham.
